An easy quick bread that is wonderful served warm or cold. Recipe makes one loaf but can easily be doubled. This probably can also made in a bread machine, using cake setting. Check your machine’s manual for guidelines.

An easy quick bread that is wonderful served warm or cold.

Prep Time 20 minutes
Cook Time 50 minutes
Total Time 1 hour 10 minutes

Ingredients

  • 1⁄3 cup shortening (butter/margarine)
  • 2 eggs
  • 1⁄2 cup sugar
  • 3⁄4 cup flour
  • 1 teaspoon baking powder
  • 1⁄2 teaspoon baking soda
  • 1 cup banana (mashed, very ripe 2-3)
  • 1⁄2 cup walnuts (chopped, optional)

Instructions

  1. Cream shortening and sugar.
  2. Add eggs, beat well.
  3. Add dry ingredients and then bananas and nuts.
  4. Pour into well greased loaf pan and bake at 350 degrees for 45 to 50 minutes until knife inserted comes out nearly clean.

Notes

Recipe makes one loaf but can easily be doubled.
