A tasty but simple dish from Nigella.

Yield: 2 Servings

Chicken, Chorizo and Beans

A tip of the hat to Nigella Lawson... this is great served with spring greens or cabbage

Prep Time 5 minutes
Cook Time 40 minutes
Total Time 45 minutes

Ingredients

  • 1 sliced chicken breasts (1)
  • 1 can white beans (or chick peas)
  • 1 can chicken broth (enough to cover breasts)
  • 200 grams chorizo sausage (buy in a chunk and cube it)

Instructions

  1. Boil the chicken breast in the chicken broth.
  2. Meanwhile, start cooking the sausage in another saucepan. Don't get the heat too high or the sausage will burn.
  3. After the reddish oil has started to release, add the can of bean, liquid and all.
  4. Simmer until the chicken is done.
  5. Drain the chicken, top with beans and chorize, garnish with parsley and serve with your choice of greens.
