Prep Time 15 minutes
Cook Time 1 hour
Total Time 1 hour 15 minutes

Ingredients

  • 4 chicken breasts (large, boneless)
  • 1 clove garlic
  • 1⁄4 teaspoon oregano (ground or dried)
  • salt (to taste)
  • pepper (to taste)
  • 1⁄2 cup red wine vinegar
  • 1⁄2 cup olive oil
  • 1⁄2 cup green olives
  • 2 cups capers
  • 6 bay leaves
  • 1 cup brown sugar (soft)
  • 1 cup white wine (any)

Instructions

  1. In a large bowl, combine chicken, garlic, oregano, salt, pepper, vinegar, olive oil, olives, capers, and bay leaves. Marinate 3-5 hours or overnight.
  2. In a baking pan, arrange chicken in a single layer with marinade. Sprinkle with brown sugar and pour white wine over whole mixture.
  3. Bake 50 minutes-1 hour at 350F, basting regularly. I baked at 170 C (fan-powered oven) for a little less than 50 min.

Notes

For less sweetness, cut down brown sugar. I omit green olives because I don't like them-makes little diff.
