Chicken Madagascar
Great for something different - a little on the sweet side. Very easy to make.
Ingredients
- 4 chicken breasts (large, boneless)
- 1 clove garlic
- 1⁄4 teaspoon oregano (ground or dried)
- salt (to taste)
- pepper (to taste)
- 1⁄2 cup red wine vinegar
- 1⁄2 cup olive oil
- 1⁄2 cup green olives
- 2 cups capers
- 6 bay leaves
- 1 cup brown sugar (soft)
- 1 cup white wine (any)
Instructions
- In a large bowl, combine chicken, garlic, oregano, salt, pepper, vinegar, olive oil, olives, capers,and bay leaves. Marinate 3-5 hours or overnight.
- In a baking pan, arrange chicken in a single layer with marinade. Sprinkle with brown sugar and pour white wine over whole mixture.
- Bake 50 minutes-1 hour at 350F, basting regularly. I baked at 170 C (fan-powered oven) for a little less than 50 min.
Notes
For less sweetness, cut down brown sugar. I omit green olives because I don't like them-makes little diff.
