Chocolate Chip Shortbread Cookies

I love Tollhouse Chocolate Chip cookies, more than any other. I also love shortbread. It’s worth giving these light and crumbly shortbread chocolate chip cookies a try.

Yield: 2 Dozen

Chocolate Chip Shortbread Cookies

Light and crumbly shortbread with mini chocolate are fab!

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes

Ingredients

  • 1 cup butter (softened)
  • 1⁄2 cup sugar (powdered, confectioners)
  • 2 cups cornstarch
  • 1 cup chocolate chips (mini)
  • 1 1⁄2 cups flour

Instructions

  1. Beat butter and powdered sugar with mixer until light and fluffy.
  2. Sift flour and corn starch together and mix gradually into butter/sugar mixture.
  3. Once combined, add mini-chocolate chips.
  4. Shape into 1 1/4 inch balls and bake at 330 degrees for 18 to 20 minutes until bottoms are light golden brown and cookies feel mostly set.
  5. Allow to cool and keep in an airtight container.
