Garlic & Onion Roast Asparagus
An easy method of cooking asparagus, and a nice change from regular boiled.
Ingredients
- 1 bunch asparagus (about 25 stalks)
- 3 tablespoons olive oil (extra virgin)
- 1⁄8 onion (minced)
- 1 garlic (clove)
- 1 pinch salt
- 1 pinch pepper (to taste)
Instructions
- Preheat oven to 450 F (240 C).
- On a large baking sheet, pour about 3 tbsp of olive oil. Add onion and garlic, mix with fingers. then place the asparagus on top, spread the bunch apart, and roll in the garlicky, onion-y oil to coat.
- Sprinkle with salt. Roast about 15 minutes (depending on thickness of asparagus) until wilty brown at the tips and soft.
