These and jalapeno rolls are a popular appetizer or snack.

Mexican Rollups

This appetizer is popular at gatherings, there's rarely any leftover!

Ingredients

  • 1 cup creme fraiche (or sour cream)
  • 8 ounces cream cheese (, philly)
  • 4 ounces green chilies (drained)
  • 1 cup green olives (chopped)
  • 1⁄2 cup cheddar (grated)
  • 1 teaspoon onion (minced)
  • 1 teaspoon garlic salt
  • 12 flour tortillas
  • jalapenos (chopped, to taste)
  • (chopped, optional)

Instructions

  1. Blend crème fraiche and cream cheese until smooth.
  2. Add remaining ingredients (except for tortillas) and mix well.
  3. If tortillas are not flexible enough to roll easily, 40 seconds in the microwave (entire amount- covered in a paper towel) will warm them slightly.
  4. Spread cheese mixture on tortillas, roll up and place seam side down in a glass dish.
  5. Chill for several hours until firm. Slice into ½-inch sections and serve.
