Potato, Red Onion and Feta Frittata

Ingredients
- 1 1⁄2 teaspoons olive oil
- 1 red onion (sliced)
- 350 grams potatoes (new/baby halved or quartered, cooked (12oz))
- 6 eggs (lightly beaten)
- 115 grams feta cheese (cubed, 4oz)
- salt
- pepper
Instructions
- Saute onion 5 min till softened in heavy frying pan.
- Add potatoes and cook 5 min till golden.
- Spread mixture evenly over bottom.
- Preheat oven grill to to high.
- Season eggs, then pour over onion/potato.
- Sprinkle cheese over top and cook over moderate heat 5-6 min till eggs are just set and base is golden.
- Place pan under grill and cook top for another 3 minutes until set and golden.
- Serve warm or cold.
