Sage Holiday Stuffing

I honestly don’t recall where this one came from after so many years, but I had never had sausage added to stuffing before I moved to the UK. I didn’t even like stuffing. I tried a British Christmas turkey stuffing (with sausage-meat) and now I always add sage sausage to stuffing, even adding it to the sage Stove Top.

With this made from scratch recipe, anything could be optional, except the bread cubes of course.

Holiday Stuffing

Normally enough to stuff an 18 lb turkey, this is made from scratch stuffing,

Cook Time 45 minutes
Total Time 1 hour 30 minutes

Ingredients

  • 3 cups celery (chopped, with leaves)
  • 2 cups onion (chopped)
  • 2 apples (tart, cut into 1/2" cubes)
  • 1 pound ground sausage (, 455g)
  • 1 cup hazelnuts (chopped)
  • 1 cup dried cherries (or cranberries)
  • 6 cups bread cubes (drie overnight in airing cupboard)
  • 1 teaspoon salt
  • 3⁄4 teaspoon thyme
  • 3⁄4 teaspoon sage
  • pinch pepper
  • 1 cup port wine
  • 1 cup chicken stock (make from cube if needed)

Instructions

  1. Heat oil in a large skillet. Saute celery, onions over low heat until soft not brown, about 10 mins. Transfer to separate bowl.
  2. Add sausage to skillet and cook, breaking up as it cooks, 10 mins. Add saus to veg bowl.
  3. Stir the apples, hazelnuts, and dried fruit into the sausage mixture.
  4. Add bread cubes and toss.
  5. Sprinkle with ALL seasonings and toss lightly.
  6. Add port and stock and toss again.
  7. Either stuff or dont stuff, but bake at 325, loosely covered for at least 45 minutes, till crunchy lovely on top.
