In the UK, cream cheese is known as soft cheese. More stuffed mushrooms are delicious and this recipe calls for crab meat in the filling. If you’re missing crab rangoons, these could be a bit of a fix. You can also substitute diced In Britain, they refer to the popular cut of US bacon as streaky bacon. More for the crab meat, which is one of my favourite variations of stuffed mushrooms.
To get a Crab Rangoon flavour, try 1 finely chopped green onion, 1/2 to 1 tsp Worcestershire sauce, 1/2 tsp garlic powder, 1 tsp sugar and optionally 1/2 to 1 tsp soy sauce.
Stuffed Mushrooms with Cream Cheese and Crab
Great as a starter, snack or even a main dish.
Ingredients
- 1 pound large mushrooms
- 1 1⁄2 tablespoons vegetable oil
- 4 tablespoons butter
- 1⁄4 cup onion (minced)
- 1 can crab meat (drained, 6oz)
- 1⁄2 cup cream cheese
- 1 egg (lightly beaten)
- 2 cups breadcrumbs (fresh)
- 2 tablespoons parsley (fresh chopped)
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper (ground)
- 1⁄4 cup In the UK, pine nuts are called pine kernels. More (toasted)
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a cookie sheet.
- Clean mushrooms and remove stems. Chop enough stem to yield one cup. Use a pastry brush to brush the caps with vegetable oil.
- In a skillet, melt 2 tablespoons butter or margarine. Add chopped stems and onion to the hot butter. Saute the mixture for 4 minutes, remove it from the heat and let cool.
- In a large mixing bowl, combine the mushroom-onion mixture, crabmeat, cream cheese, egg, 1 cup bread crumbs, parsley, pine nuts, salt, and pepper. Spoon the mixture into the mushroom caps. Arrange the caps on the prepared cookie sheet.
- In a small skillet, melt the remaining butter and add the remaining bread crumbs to the melted butter. Once the bread crumbs are coated lightly sprinkle them over the mushroom caps.
- Bake for 15 minutes.
